Do you really need a 450°C oven to bake a pizza?

This time, instead of relying on instinct or experience, we analyzed Neapolitan-style pizza through heat transfer and steam expansion.

The moment the dough enters the oven, intense conductive heat flows through the bottom while radiant heat and superheated air attack the surface from above.

At the same time, moisture trapped inside the dough heats rapidly and turns into steam.

The gluten network traps the expanding gases and steam, causing the outer rim — the cornicione — to inflate dramatically in a matter of seconds.

Meanwhile, moisture rapidly evaporates from the surface.

At these extreme temperatures, Maillard reactions and browning accelerate, creating the crisp exterior and characteristic charred leopard spots of a wood-fired pizza.

So the real secret isn’t simply that the oven is hot.

Temperature,
time,
moisture,
heat conduction,
radiant heat,
gas expansion,
and the structure of the dough all have to work together.

Did we really need to analyze all of this just to bake one pizza?

Probably not.

But we did it anyway.

Far more serious than necessary.
Surprisingly useful once you understand it.
